Sardine Fra Diavolo

Ingredients

  • 4 Tbsp. olive oil
  • 1 small onion, chopped
  • 4 cloves garlic, minced
  • ¾ cup white wine
  • 28 oz. can crushed tomatoes
  • 1 tsp. red pepper, dried
  • 1 tsp. basil, dried
  • ¾ tsp. salt
  • ½ tsp. oregano, dried
  • ½ tsp. parsley, dried
  • 3 tins Season Brand Sardines, drained
  • salt & black pepper to taste
  • 1 lb. linguine or spaghetti

Instructions

  1. Heat olive oil in a dutch oven or large skillet.
  2. Sauté onions until translucent, about 10 minutes.
  3. Add minced garlic, sauté for a minute or two.
  4. Add white wine, scrape pan to deglaze.
  5. Add crushed tomatoes, red pepper, basil, salt, oregano & parsley.
  6. Simmer, covered, for 15- 20 minutes, stirring occasionally.
  7. Taste, add additional red pepper if more heat is preferred.
  8. Add sardines. Simmer over low heat for 10 minutes.
  9. Salt & pepper to taste if necessary.
  10. Serve over cooked spaghetti or linguine. Enjoy!
